The citizens rebelled and bakers decided they would no longer use salt in their bread and thus they did not have to pay for the tax, eventually this tax was banned however Tuscan bakers have kept not using salt in their bread. In Tuscany You have to ask for a "pugliese" for a loaf or bread to have a trace of salt in it.

The oldest olive tree is in Italy, found in Umbria and is said to be over 1700 years old.
